José selected the sweet and smokey "agridulce" variety of Jariza peppers, which gives an intense flavour with medium heat.
The peppers are grown in La Vera region of Extremadura. Handpicked and dried slowly over oak wood for up to 15 days is what gives this quality pimentón its distinct flavour.
